María de las Nieves García-Casal She is a nutritionist born in Galacia, Spain, raised and educated in Venezuelaand the first woman to lead the Latin American Society of Nutrition (SLAN). She was the president during the period 2012 to 2015. She was the President of the Venezuelan Chapter of the Society for the period 2014–2019. Her research includes iron nutrition and also the assessment of marine algae as a source of food for humans.
Han Young-sil, is a professor and nutritionist in South Korea. She was president of Sookmyung Women's University.

Herodicus was a Greek physician of the 5th century BC, a native of Megara, who lived most of his life in the Thracian town of Selymbria. The first use of therapeutic exercise for the treatment of disease and maintenance of health is credited to him, and he is believed to have been one of the tutors of Hippocrates. His theories are considered the foundation of sports medicine. He also recommended good diet and massage using beneficial herbs and oils. He was specific in the manner that a massage should be given. He recommended that rubbing be initially slow and gentle, then subsequently faster, with the application of more pressure, which was to be followed by more gentle friction.

Staffan Lindeberg (1950–2016) was an associate professor of family medicine at the Department of Medicine, University of Lund, Sweden. He was a practicing GP at St Lars Primary Health Care Center, Lund, Sweden. Lindeberg researched the paleolithic diet.

Heather Little-White was a Jamaican nutritionist, journalist and disabilities activist. After earning degrees in nutrition and communication, she worked with Grace Kitchens and founded the television program Creative Cooking to share sound nutritional advice throughout the country. As a journalist, besides writing articles on nutrition, she wrote a weekly column on sexuality for the Outlook Magazine segment of The Gleaner newspaper. After working with the Reggae Boyz, Jamaica's national football team, as a nutrition consultant, Little-White became paralyzed from the waist down after being shot during a robbery attempt. Becoming an advocate for people with disabilities, she focused on bringing awareness, accessibility, and assistance to Jamaicans living with disabilities. She was honored as an officer in the Order of Distinction in 2001.

Major-General Sir Robert McCarrison, CIE, FRCP was a Northern Ireland physician and nutritionist in the Indian Medical Service, who was made a Companion of the Indian Empire (CIE) in 1923, received a knighthood in July 1933, and was appointed as Honourable Physician to the King in 1935.

Miguel Ángel Martínez-González is a Spanish medical doctor, epidemiologist, professor, and nutrition researcher He has been often a visiting scholar at Harvard T.H. Chan School of Public Health.

Jean Mayer was a French-American scientist best known for his research on the physiological bases of hunger and the metabolism of essential nutrients, and for his role in shaping policy on world hunger at both the national and international levels. As a professor at the Harvard School of Public Health, Mayer directed a laboratory that did groundbreaking work on the hypothalamic regulation of obesity and various metabolic disorders. In 1968-69, having worked as an adviser to the World Health Organization and UNICEF, he was appointed principal organizer and chair of the first White House Conference on Food, Nutrition, and Health. At Harvard University, he served as Master of Dudley House before leaving in 1976 to become the tenth President of Tufts University in Medford, Massachusetts, where he is given credit for having brought about an unprecedented rise in the university's national reputation. He died unexpectedly on January 1, 1993.

Hamish Nisbet Munro FRSE (1915–1994) was a Scottish biochemist and expert in protein metabolism at Glasgow University and Massachusetts Institute of Technology. He served as president of the American Institute of Nutrition in 1978, and was first director of the USDA Human Nutrition Research Centre on Ageing at Tufts University.

Kaare Reidar Norum was a Norwegian physician and professor of nutrition. He served as rector of the University of Oslo from 1999 to 2001.

Uffe Ravnskov is a Danish medical doctor, independent researcher, and a former assistant professor and medical practitioner in Denmark and Sweden. In recent years, he has become known for querying the scientific consensus regarding the lipid hypothesis.

Jane Ann Thornthwaite is a Canadian politician who was elected in the 2009 provincial election to represent the riding of North Vancouver-Seymour in the 39th Parliament of British Columbia, and subsequently re-elected in 2013 to the 40th Parliament and in 2017 to the 41st Parliament, all as member of the BC Liberal Party. She has held several parliamentary secretary roles focusing on mental health and addictions. In 2012 she introduced private member's bill to establish standards of care for pet breeders and while it was not adopted, a version was included in a 2017 amendment to the Prevention of Cruelty to Animals Act. She also introduced private member's bills in 2018 and 2019 addressing care for children at risk of serious harm and reporting on welfare payment methods.

Dimitrios Trichopoulos, was a Mediterranean Diet expert and tobacco harms researcher. He was Vincent L. Gregory Professor of Cancer Prevention and Professor of Epidemiology, and a past chair of the Department of Epidemiology, in the Harvard School of Public Health in Boston.
Zheng Ji also known as Libin T. Cheng, was a Chinese nutritionist and a pioneering biochemist. He was reputed to be the world's oldest professor and the founder of modern nutrition science in China, having lived to the age of 110.
